- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg room temperature
- 2 teaspoons pure vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Green sanding sugar or sprinkles for rolling, optional
- 1/2 cup unsalted butter softened for frosting
- 2 cups powdered sugar
- 1 teaspoon mint extract
- 2-3 tablespoons heavy cream
- Green gel food coloring
Preheat oven to 350°F. Line baking sheets with parchment.
Cream 1/2 cup butter, granulated sugar, and brown sugar until fluffy, 2 minutes.
Beat in egg and vanilla. Scrape bowl.
Whisk flour, baking soda, and salt. Mix into wet ingredients.
Scoop tablespoon balls, roll in green sugar. Bake 8-10 minutes. Cool.
For frosting: Beat 1/2 cup butter, add powdered sugar, mint extract, cream. Tint green.
Frost cooled cookies.
